Pièces détruites, presented at Museo Jumex during Urs Fischer’s Lovers, takes inspiration from the extravagant pièces montées of Marie-Antoine Carême and Urbain Dubois — 19th-century chefs for the European elite. Referencing their elaborate dessert sculptures, it examines how celebrations and culinary spectacle have historically served to assert power and establish hierarchies. Pieces made of chocolate and gelatin were displayed on a mobile cart and given away to be eaten, metabolized, and excreted, reflecting on the violence of taste and ritualized excess. A re-enactment of royal food ceremonies through baroque absurdity, the piece explores the historical reality of the ingredients, and the way in which rituals of food and serving have historically staged power.
